Easy Beef Enchilada Bake

A hearty, cheesy, and flavorful family favorite! This Easy Beef Enchilada Bake combines seasoned ground beef, fresh tomatoes, onions, black olives, melted cheddar cheese, and savory enchilada sauce, all wrapped in soft flour tortillas and baked until warm and bubbly. Top it with a dollop of sour cream for a delicious meal that is simple enough for a weeknight but satisfying enough to serve to family and friends.


Ingredients

  • 1½ pounds ground beef

  • 2 packages taco seasoning

  • 1 can (2.25 oz.) black olives, drained

  • 2 medium tomatoes

  • ½ large onion

  • 1 can (28 oz.) medium-hot enchilada sauce

  • 6 soft taco-size flour tortillas

  • 3 cups shredded cheddar cheese

  • Sour cream, to taste


Directions

Preheat the oven to 350°F.

Prepare the ground beef according to the directions on the taco seasoning packages. Set aside.

Drain the black olives and cut them into quarters. Chop the tomatoes and onion. Place the olives, tomatoes, and onion in a bowl and toss together. Set aside.

Spray or lightly grease a 9 × 12-inch baking pan. Pour a thin layer of enchilada sauce across the bottom of the pan.

Lay one tortilla flat and place a layer of the prepared ground beef down the center. Add a portion of the tomato, onion, and olive mixture, followed by a generous amount of shredded cheddar cheese.

Carefully roll the tortilla around the filling and place it seam-side down in the prepared baking pan. Repeat with the remaining tortillas and filling.

Carefully pour the remaining enchilada sauce over the top of the rolled tortillas, making sure each enchilada is completely covered.

Sprinkle approximately 1 cup of shredded cheddar cheese over the top.

Cover the baking dish with foil and bake for 45 minutes. Serve warm with sour cream to taste.
